What a crowd pleaser!
Based on the traditional Italian pork roast, our talented butchers butterfly a boneless, skin-on pork shoulder, stuff it with fennel, rosemary, garlic and black pepper and tie it up. Roast this uncovered at 375 until the internal temperature hits 160. Root vegetables placed underneath the roast will soak up all the delicious drippings.
Our pastured pork shoulder will be juicy and tender on the inside, slightly shreddy towards the outside and all covered with crunchy pork skin (the crackling!). Your friends will think you are a culinary genius!
